Climate change, resulting in warmer temperatures and long-term drought, has created major challenges for California agriculture. Agaves present an opportunity for new climate resilient crop to help California agriculture respond. California agave growers have already proven California can grow agave with very little water. California’s distillers have also proven they can produce high quality agave spirits, unique to California, using locally grown fresh agave. California consumers are leaders of the farm-to-fork and farm-to-glass movement and increasingly demanding more locally grown food and drinks that are both environmentally and economically sustainable.
